Savory fava beans cake

Ingredients for a 30x12 cm pan


1500 g fresh fava beans with pods or 400 g fresh shelled fava beans

350 g plain flour

180 g grated pecorino (or gruyere)

3 medium eggs

50 g extra virgin olive oil

45 g milk

45 g water

40 g white wine

7 g instant yeast

5 g salt.

White pepper a pinch


Shell the fresh broad beans. In a saucepan, boil some water and blanch the shelled broad beans for a couple of minutes.

Drain and leave to cool. Remove the hard skin of the bean and set the beans aside. There will be about 200 g fava beans.

stir the yeast in the milk at room temperature or slightly warmed.

Preheat the oven to 160 ° fan.

Prepare the dough with the sifted flour and grated cheese in a large bowl. Add the lightly beaten eggs and all other liquid ingredients. Stir it until the ingredients have mixed well. Add salt and pepper.

Oil the pan and line it with baking paper. Pour the mixture into the pan and bake for about 45-50 minutes.
